Roasted Red and Sweet Potatoes

Makes 6 servings of ½ cup each

  • 6 red potatoes
  • 2 medium sweet potatoes
  • 2 Tablespoons oil


  1. Preheat the oven to 400°F.
  2. Wash your hands well with soap and hot water.
  3. Wash the potatoes under running water. Scrub off any dirt.
  4. Cut the potatoes into bite-sized pieces.
  5. Spread the potato pieces onto a large baking sheet.
  6. Pour the oil over the potatoes.
  7. Mix them with your hands until the potatoes are covered with oil.
  8. Spread the potatoes into a single layer on the baking sheet.
  9. Put the baking sheet in the oven.
  10. Bake until the potatoes are brown and tender, about 25-30 minutes. Turn them twice while they are cooking.
  11. Serve the potatoes while they are hot.
  12. Refrigerate any leftovers within 2 hours.
