Taco Rice

INGREDIENTS


  • 1 pound ground beef
  • 1 (12 ounce) bag frozen bell pepper and onion blend
  • 2 Tablespoons Taco seasoning mix, low sodium, or HappyHealthy Taco Seasoning
  • 2 cups beef broth, 50% less sodium
  • 2 cups instant whole grain brown rice
  • 1 cup salsa
  • 1/2 cup low-fat cheddar cheese, shredded

DIRECTIONS


  1. Wash your hands well with soap and warm water for at least 20 seconds.
  2. Heat a large pot over medium heat. Add beef and cook until no longer pink, 5-10 minutes. Drain meat and set aside. 
  3. Add pepper and onion blend to pot and cook until tender, 5 minutes. 
  4. Return cooked meat to skillet with pepper and onion blend.  Add taco seasoning and beef broth and bring to a boil.  Turn heat down and add in uncooked rice.  Cover and cook 5-10 minutes until rice is tender.
  5. Remove lid and stir in salsa and cheese.
  6. Refrigerate leftovers within 2 hours.
