Sweet Potato Hash

INGREDIENTS


  • 1 (10 ounce) bag frozen sweet potatoes or 1 large sweet potato 
  • 1 Tablespoon vegetable oil 
  • 1 (12 ounce) bag frozen bell pepper and onion blend 
  • 1 teaspoon garlic powder 
  • 2 teaspoons HappyHealthy all-purpose seasoning
  • ¼ cup (and 2 Tablespoons as needed) water 
  • 1/3 cup shredded mozzarella cheese

DIRECTIONS


  1. Wash your hands well with soap and warm water for at least 20 seconds. 
  2. If using frozen sweet potato skip to step 3. If using fresh sweet potato rinse under running water and remove excess dirt and stray fibers. Peel and cut into 1-inch cubes. 
  3. Heat large cast iron skillet over medium heat. Add oil. 
  4. Add bell pepper and onion blend to the pan, saute until tender, about 5 minutes. 
  5. Add sweet potatoes and garlic powder to peppers and onion. 
  6. Add water to skillet. Stir to coat sweet potatoes and vegetables. Cover (with lid or aluminum foil) and let steam for 5-10 minutes on low heat, or until potatoes reach desired tenderness. Additional water may need to be added during this time, 2 Tablespoons at a time, stirring occasionally. 
  7. Remove covering and stir in all-purpose seasoning. Top with mozzarella cheese and allow cheese to melt. 
  8. Refrigerate leftovers within 2 hours.
