Slow Cooker Smoked Turkey with Black Beans

Makes 10 servings; 1 cup smoked turkey with black beans, 1/2 cup brown rice

INGREDIENTS


  • 1 pound dry black beans
  • 4 cups reduced sodium chicken broth
  • 1 14.5 ounce can petite diced tomatoes, no salt added
  • 12 ounces frozen vegetable mix (recommend bell peppers, celery, and onion)
  • 1 Tablespoon HappyHealthy All Purpose Seasoning
  • 1 pound smoked turkey drumstick 
  • 5 cups cooked brown rice

DIRECTONS


  1. Wash your hands well with soap and warm water for at least 20 seconds.
  2. Rinse beans, removing damaged beans and add to slow cooker. There is no need to soak beans before adding to slow cooker. 
  3. Add broth, diced tomatoes, frozen vegetables, and HappyHealthy All Purpose Seasoning to slow cooker and stir.
  4. Place turkey drumstick in the slow cooker so that it is touching the bottom of the slow cooker and ingredients are almost covering it. Cover and cook on low for 7 hours.
  5. Follow package directions to cook rice.
  6. Remove turkey drumstick and shred meat, removing and bones and fat. Add meat back to the slow cooker and stir. Serve over brown rice.
  7. Refrigerate leftovers within 2 hours.
