Slow Cooker Pork Loin

Makes 12 servings; 2 thin slices (1½ ounces) each serving

INGREDIENTS


  • 3 to 4 pounds pork loin
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • ½ teaspoon onion powder
  • ½ teaspoon pepper
  • ⅓ cup low sodium chicken broth
  • ⅓ cup HappyHealthy Italian Dressing

DIRECTIONS


  1. Wash your hands well with soap and warm water for at least 20 seconds.
  2. Use paper towels to pat dry pork loin.
  3. In a small bowl, add paprika, salt, onion powder, and pepper and stir with a fork to combine. Rub seasoning mixture over the pork loin. Cut pork loin in half if needed.
  4. Wash your hands well with soap and warm water for at least 20 seconds.
  5. Add chicken broth to slow cooker and place pork loin fat side up in broth. Shake or mix HappyHealthy Italian dressing and pour over the pork. Cover and cook for 4 to 5 hours on low or for 3 hours on high until internal temperature of pork reaches 145°F. Remove pork and transfer to a cutting board. Cover with foil tent and let rest for 15 minutes before slicing.
  6. Refrigerate leftovers within 2 hours.
