INGREDIENTS
- 1 cup vegetables
- Vegetable oil cooking spray or vegetable oil
- 12 large eggs
- 1 cup cottage cheese, low fat
- ½ teaspoon salt
- ½ teaspoon pepper
- 1/2 cup cheddar cheese, low fat, shredded
DIRECTIONS
- Preheat oven to 350°F.
- Wash your hands well with soap and warm water for at least 20 minutes.
- Wash fresh vegetables if using or use leftover cooked vegetables. Cut vegetables into small pieces.
- Spray a rimmed 18 x 13 x 1 inch baking sheet pan with vegetable oil cooking spray, be sure to spray rims.
- Whisk eggs, cottage cheese, salt, and pepper together in a large bowl. Pour egg mixture in baking sheet pan.
- Sprinkle cheese and cut vegetables over the mixture.
- Bake until eggs are set, about 15 – 18 minutes. Slice into squares and serve.
- Refrigerate any leftovers within 2 hours.
