Roasted Beets

INGREDIENTS


  • 2 pounds fresh beets (with or without stems) 
  • 1 Tablespoon vegetable oil 
  • ¼ teaspoon salt 
  • 1/8 teaspoon pepper 
  • Vegetable oil cooking spray or vegetable oil

DIRECTIONS


  1. Preheat oven to 350°F. 
  2. Wash your hands well with soap and warm water for at least 20 seconds. 
  3. Wash beets under running water to remove any dirt or debris. Remove stem and cut into quarters or small halves. 
  4. Spray sheet pan with vegetable oil cooking spray. 
  5. Put beets, oil, salt, and pepper into a large plastic storage bag, seal and toss to coat. 
  6. Arrange beets in one layer on sheet pan. Bake in oven for 30 minutes, until fork tender. 
  7. Refrigerate leftovers within 2 hours.
