Quick Baked Potatoes

Makes 6 servings; 1/2 potato each serving

INGREDIENTS


  • Vegetable oil cooking spray or vegetable oil 
  • 3 whole baking potatoes, similar in size 
  • 1 teaspoon HappyHealthy all-purpose seasoning
  • 1/8 teaspoon salt 
  • Toppings: ½ cup low fat shredded cheese divided, ½ cup low fat plain yogurt, divided, green onions

DIRECTIONS


  1. Preheat oven to 450°F. 
  2. Wash your hands well with soap and warm water for at least 20 seconds. 
  3. Spray a baking sheet with vegetable oil cooking spray. 
  4. Wash potatoes well and cut in half lengthwise (like a book). 
  5. Place potato halves cut side up, spray with oil, and sprinkle evenly with all-purpose seasoning and salt. Turn potato halves cut side down on baking sheet and bake for 25-30 minutes, or until fork tender. 
  6. Add toppings, 2 Tablespoons each. 
  7. Refrigerate leftovers within 2 hours.
