Parmesan Crusted Catfish

INGREDIENTS


  • Vegetable oil cooking spray or vegetable oil.
  • 1/2 cup grated Parmesan cheese
  • 2 teaspoons dried parsley
  • 2 teaspoons paprika
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 Tablespoon vegetable oil
  • 4 catfish filets, about 4 ounces each

DIRECTIONS


  1. Preheat the oven to 400°F.
  2. Wash your hands well with soap and warm water for at least 20 seconds.
  3. Line a baking pan with aluminum foil and coat with vegetable oil cooking spray.
  4. Mix Parmesan cheese, parsley, paprika, salt, and pepper together in a shallow bowl.
  5. Use a spoon or brush to coat fillets with oil. Press filets into the Parmesan cheese mixture.  Arrange the filets on the baking pan. Bake in the oven for 25-30 minutes until fish flakes easily with a fork. Broil last 2 minutes for crispier filets. 
  6. Refrigerate leftovers within 2 hours
