Orange Oatmeal Pancakes

INGREDIENTS


  • ½ cup all-purpose flour
  • ½ cup whole wheat flour
  • ½ cup quick oats
  • 1 Tablespoon baking powder
  • ½ teaspoon salt
  • 1 large egg
  • ¾ cup orange juice
  • ½ cup milk
  • 1 Tablespoon honey
  • 2 Tablespoons vegetable oil
  • Vegetable Oil Cooking Spray

DIRECTIONS


  1. Wash your hands well with soap and warm water for at least 20 seconds.
  2. In a medium bowl, mix all-purpose flour, whole wheat flour, oats, baking powder, and salt.
  3. In a large bowl, whisk egg, orange juice, milk, honey, and oil. Stir flour mixture into wet ingredients and mix well.
  4. Heat a large skillet on medium low and spray with vegetable oil cooking spray.
  5. Add 1/4 cup of pancake batter, allowing plenty of room for pancakes to spread (recommend no more than three pancakes at a time). Cook until bubbles form on the top. Lightly spray uncooked side of pancake with vegetable oil cooking spray, then flip. Cook until bottom is lightly brown.
  6. Repeat to make remaining pancakes, spraying skillet with vegetable oil when needed.
  7. Refrigerate leftovers within 2 hours.
