One Pan Chicken and Vegetables

INGREDIENTS


  • 2 boneless, skinless chicken breasts 
  • Vegetable oil cooking spray or vegetable oil 
  • 1 bag (12 ounce) frozen broccoli florets 
  • 1 bag (12 ounce) frozen sliced carrots 
  • 1 Tablespoon vegetable oil 
  • 1/2 Tablespoon HappyHealthy Cajun seasoning
  • 1 Tablespoon garlic powder 
  • 1/8 teaspoon salt

DIRECTIONS


  1. Preheat oven to 450°F. 
  2. Wash your hands well with soap and warm water for at least 20 seconds. 
  3. Trim chicken of excess fat and cut into 1-inch cubes. Wash your hands well with soap and warm water for at least 20 seconds. 
  4. Spray sheet pan with vegetable oil. 
  5. Put broccoli, carrots, chicken, oil, cajun seasoning, garlic powder and salt inside a large plastic storage bag, seal, and toss to coat. 
  6. Spread evenly in one layer onto sheet pan. 
  7. Bake in oven for 30 minutes. 
  8. Refrigerate leftovers within 2 hours.
