INGREDIENTS
- 2 boneless, skinless chicken breasts
- Vegetable oil cooking spray or vegetable oil
- 1 bag (12 ounce) frozen broccoli florets
- 1 bag (12 ounce) frozen sliced carrots
- 1 Tablespoon vegetable oil
- 1/2 Tablespoon HappyHealthy Cajun seasoning
- 1 Tablespoon garlic powder
- 1/8 teaspoon salt
DIRECTIONS
- Preheat oven to 450°F.
- Wash your hands well with soap and warm water for at least 20 seconds.
- Trim chicken of excess fat and cut into 1-inch cubes. Wash your hands well with soap and warm water for at least 20 seconds.
- Spray sheet pan with vegetable oil.
- Put broccoli, carrots, chicken, oil, cajun seasoning, garlic powder and salt inside a large plastic storage bag, seal, and toss to coat.
- Spread evenly in one layer onto sheet pan.
- Bake in oven for 30 minutes.
- Refrigerate leftovers within 2 hours.
