Frozen Yogurt Bark

INGREDIENTS


  • 3/4 cup strawberries, fresh
  • 1/2 cup blueberries, fresh
  • 1 1/2 cup low-fat plain Greek yogurt
  • 2 Tablespoons honey or maple syrup
  • 2 Tablespoons chopped walnuts, optional

DIRECTIONS


  1. Wash your hands well with soap and warm water for at least 20 seconds.
  2. Wash strawberries and blueberries. Cut tops off strawberries and cut into slices. 
  3. In a bowl mix together yogurt and honey. Line a 13 x 9 x 2 baking dish with parchment paper. Using a spatula or knife, spread the mixture over the paper as thinly as possible.
  4. Sprinkle the nuts over the mixture. Using your fingertips, gently press the nuts into the yogurt mixture.
  5. Sprinkle the strawberries and blueberries all over. Using your fingertips, gently press the fruit into the yogurt mixture.
  6. Cover the dish and freeze overnight.
  7. At serving time gently lift the parchment paper from the dish and break into pieces.
  8. Freeze any leftovers immediately.
