Fiesta Hominy and Corn

INGREDIENTS


  • 1 (15 ounce) can Hominy
  • 1 (8.5 ounce) can whole kernel corn
  • 1 Tablespoon vegetable oil
  • 1 (12 ounce) bag frozen onion and bell pepper blend
  • 1 Tablespoon minced garlic
  • 1/2 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon oregano
  • 1 (12 ounce) bag frozen corn

DIRECTIONS


  1. Wash your hands well with soap and warm water for at least 20 seconds.
  2. Rinse and drain hominy.
  3. Drain corn over hominy. 
  4. Heat large skillet on medium heat, add oil. Add pepper and onion blend and cook until tender, about 5 minutes.
  5. Stir in garlic, cumin, chili powder and oregano.
  6. Add hominy and corn and cook stirring occasionally until cooked through, about 5 minutes.
  7. Refrigerate any leftovers within 2 hours.
