Broccoli Cranberry Salad

Makes 8 servings; 1/2 cup each serving

INGREDIENTS


 

  • 2 broccoli crowns, fresh
  • 1/2 cup red onion
  • 1/2 cup dried cranberries 
  • 2 Tablespoons bacon bits, optional
  • ½ cup mayonnaise, low-fat
  • 2 teaspoon vinegar
  • 2 Tablespoons sugar

DIRECTIONS


  1. Wash your hands well with soap and warm water for at least 20 seconds.
  2. Wash broccoli and cut into bite size pieces.  Add pieces to a mixing bowl.
  3. Cut onion into small pieces.  Add onion, craisins and bacon bits to bowl.
  4. Mix mayonnaise, vinegar and sugar and pour over ingredients, blend well.  Chill for 1-2 hours prior to serving.
  5. Refrigerate leftovers within 2 hours.
