INGREDIENTS
- Vegetable oil cooking spray or vegetable oil.
- 1/2 cup fresh blueberries
- 2 large eggs
- 1 cup cottage cheese
- 1/2 cup old-fashioned rolled oats
- 2 Tablespoons honey or maple syrup
- 1/2 teaspoon cinnamon
- 1/4 teaspoon vanilla flavoring
DIRECTIONS
- Preheat oven to 350° F
- Wash your hands well with soap and warm water for at least 20 seconds.
- Spray 8 x 8 baking dish with vegetable oil cooking spray.
- Wash blueberries.
- Whisk eggs in a small bowl.
- In a bowl, mix cottage cheese, rolled oats, eggs, honey or maple syrup, blueberries, cinnamon and vanilla flavoring until combined.
- Pour the mixture into the greased baking dish
- Bake for about 25-30 minutes or until the edges are golden brown and the center is set.
- Allow to cool before slicing.
- Refrigerate and leftovers within 2 hours.
