One Pan Hawaiian Chicken

INGREDIENTS


  • 1 broccoli crown, fresh
  • 1 red bell pepper
  • 1 (20 ounce) can pineapple chunks in 100% fruit juice
  • Vegetable Oil cooking spray or vegetable oil
  • 1 pound boneless, skinless chicken breast
  • 3 Tablespoons soy sauce
  • 2 Tablespoons Honey
  • 2 Tablespoons vinegar
  • 1/2 teaspoon red pepper flakes, optional

DIRECTIONS


  1. Preheat oven to 400°F.
  2. Wash your hands well with soap and warm water for at least 20 seconds.
  3. Wash broccoli and bell pepper.  Cut broccoli and bell pepper into bite size pieces.
  4. Drain pineapple.
  5. Lightly spray baking pan with vegetable oil cooking spray.
  6. Cut chicken into 1 inch cubes.
  7. Wash your hands well with soap and warm water for at least 20 seconds.
  8. In a bowl, combine soy sauce, honey, vinegar and red pepper flakes.  Add the chicken and marinate for 15 minutes.
  9. Add pineapple chunks, broccoli and red bell pepper to bowl with marinated chicken and stir to combine. Place mixture on the baking sheet. Bake for 20-25 minutes, or until the chicken reaches 165˚F and the vegetables are tender.
  10. Refrigerate any leftovers within 2 hours.
