Sheet Pan Eggs for a Crowd

INGREDIENTS


  • 1 cup vegetables 
  • Vegetable oil cooking spray or vegetable oil
  • 12 large eggs
  • 1 cup cottage cheese, low fat
  • ½ teaspoon salt
  • ½ teaspoon pepper 
  • 1/2 cup cheddar cheese, low fat, shredded

DIRECTIONS


  1. Preheat oven to 350°F.
  2. Wash your hands well with soap and warm water for at least 20 minutes.
  3. Wash fresh vegetables if using or use leftover cooked vegetables. Cut vegetables into small pieces. 
  4. Spray a rimmed 18 x 13 x 1 inch baking sheet pan with vegetable oil cooking spray, be sure to spray rims.  
  5. Whisk eggs, cottage cheese, salt, and pepper together in a large bowl. Pour egg mixture in baking sheet pan. 
  6. Sprinkle cheese and cut vegetables over the mixture. 
  7. Bake until eggs are set, about 15 – 18 minutes.  Slice into squares and serve.
  8. Refrigerate any leftovers within 2 hours.
