INGREDIENTS
- 1 (15 ounce) can Hominy
- 1 (8.5 ounce) can whole kernel corn
- 1 Tablespoon vegetable oil
- 1 (12 ounce) bag frozen onion and bell pepper blend
- 1 Tablespoon minced garlic
- 1/2 teaspoon cumin
- 1/2 teaspoon chili powder
- 1/2 teaspoon oregano
- 1 (12 ounce) bag frozen corn
DIRECTIONS
- Wash your hands well with soap and warm water for at least 20 seconds.
- Rinse and drain hominy.
- Drain corn over hominy.
- Heat large skillet on medium heat, add oil. Add pepper and onion blend and cook until tender, about 5 minutes.
- Stir in garlic, cumin, chili powder and oregano.
- Add hominy and corn and cook stirring occasionally until cooked through, about 5 minutes.
- Refrigerate any leftovers within 2 hours.
