Blueberry Breakfast Bake

INGREDIENTS


  • Vegetable oil cooking spray or vegetable oil.
  • 1/2 cup fresh blueberries
  • 2 large eggs
  • 1 cup cottage cheese
  • 1/2 cup old-fashioned rolled oats
  • 2 Tablespoons honey or maple syrup
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon vanilla flavoring

 

DIRECTIONS


  1. Preheat oven to 350° F
  2. Wash your hands well with soap and warm water for at least 20 seconds.
  3. Spray 8 x 8 baking dish with vegetable oil cooking spray.
  4. Wash blueberries.
  5. Whisk eggs in a small bowl.
  6. In a bowl, mix cottage cheese, rolled oats, eggs, honey or maple syrup, blueberries, cinnamon and vanilla flavoring until combined.
  7. Pour the mixture into the greased baking dish
  8. Bake for about 25-30 minutes or until the edges are golden brown and the center is set.
  9. Allow to cool before slicing.
  10. Refrigerate and leftovers within 2 hours.
