INGREDIENTS
- 2 pounds fresh beets (with or without stems) 
 
- 1 Tablespoon vegetable oil 
 
- ¼ teaspoon salt 
 
- 1/8 teaspoon pepper 
 
- Vegetable oil cooking spray or vegetable oil
 
DIRECTIONS
- Preheat oven to 350°F. 
 
- Wash your hands well with soap and warm water for at least 20 seconds. 
 
- Wash beets under running water to remove any dirt or debris. Remove stem and cut into quarters or small halves. 
 
- Spray sheet pan with vegetable oil cooking spray. 
 
- Put beets, oil, salt, and pepper into a large plastic storage bag, seal and toss to coat. 
 
- Arrange beets in one layer on sheet pan. Bake in oven for 30 minutes, until fork tender.
