Wash your hands well with soap and warm water for at least 20 seconds.
Rinse zucchini and cut into half-moons by slicing in half long ways and laying each half flat, then cutting across to make slices.
Rinse tomato and cut into slices.
Use oil or cooking spray to coat a medium skillet, heat over medium-high heat. Add zucchini slices and sauté until tender and lightly browned, about 5 minutes.
Spread ¼ cup hummus on each tortilla, top with ¼ cup of the sautéed zucchini slices, 1 tomato slice cut in half and sprinkle lightly with cheese. Top with lettuce if desired. Fold into a wrap and cut in half.
