Baked Italian Pork & Vegetables

Makes 6 servings; 1 cup pork and vegetables,1/2 cup brown rice each serving

INGREDIENTS


  • 3 cups cooked brown rice
  • 1 pound boneless pork chops or ribs
  • 10 to 12 ounces frozen broccoli cuts
  • 10 to 12 ounces frozen sweet potatoes cubes
  • 2 Tablespoons vegetable oil
  • 1.6 ounce packet Italian dressing mix, dry

DIRECTIONS


  1. Preheat oven to 350° F.
  2. Wash your hands well with soap and warm water for at least 20 seconds.
  3. Follow package directions to cook rice.
  4. Trim fat off pork and cut into cubes, about 1-inch. Add pork pieces to a large baking dish, about 9 x 13 inches.
  5. Add frozen broccoli, sweet potatoes, oil, and Italian dressing mix to baking dish and stir to evenly coat ingredients with oil and seasoning. Place baking dish in oven and cook for 45 minutes to an hour or until pork is cooked through and vegetables are tender. Serve over brown rice.
  6. Refrigerate leftovers within 2 hours.
