Chicken Quesadillas

INGREDIENTS


  • Vegetable oil cooking spray or vegetable oil
  • 1 cup frozen onion and bell pepper blend
  • 1 cup cooked shredded chicken
  • ½ teaspoon chili powder
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika 
  • 4 (8 inch) whole wheat flour tortillas
  • 1/2 cup shredded cheese, Mexican style blend, reduced fat
  • Vegetable oil cooking spray or vegetable oil

DIRECTIONS


  1. Wash your hands well with soap and warm water for at least 20 seconds.
  2. Heat a large skillet over medium heat and coat with oil. Add frozen onion and bell pepper blend and cook until tender, about 5 mins. Add cooked chicken, chili powder, garlic powder, and paprika and cook about 5 minutes, stirring occasionally. 
  3. Place 1/4 of the chicken mixture on half of each tortilla and top with 2 Tablespoons cheese. Fold the tortilla in half. Repeat for the remaining tortillas
  4. Heat a large skillet over medium heat. Spray one side of the tortilla with vegetable spray and transfer one assembled tortilla to the skillet, oiled side down. Spray the other side of the tortilla. Cook for 2-4 minutes. Turn the tortilla over and brown the other side.  Remove tortilla and repeat the process for the remaining tortillas.
  5. Refrigerate any leftovers within 2 hours.
