Tuna Roll Ups

INGREDIENTS


  • 1 (5 ounce) can tuna, packed in water
  • 1 (15.5 ounce) can kidney beans, low sodium
  • 1 (15 ounce) can whole kernel corn
  • 1/3 cup, mayonnaise, light
  • 2 Tablespoons Taco seasoning mix, low sodium, or HappyHealthy Taco Seasoning
  • 2 Tablespoons lime juice
  • 8 (10 inch) whole grain tortillas
  • 2 cups lettuce, shredded, bagged
  • 1 cup cheddar cheese, low-fat, shredded
  • 1/2 cup salsa

DIRECTIONS


  1. Wash your hands well with soap and warm water for at least 20 seconds.
  2. Drain tuna.
  3. Drain and rinse beans. 
  4. Drain corn. Add tuna, beans, and corn to a medium mixing bowl.
  5. Add mayonnaise, taco seasoning and lime juice to tuna mixture and stir to combine. 
  6. Place 8 tortillas on a flat surface. Add lettuce, tuna mixture, cheese on tortilla and top with salsa. Roll tortilla to hold tuna mixture. Cut in half. Repeat for each tortilla. 
  7. Refrigerate any leftovers within 2 hours.
