Texas Soup

INGREDIENTS


  • 1 pound ground beef
  • 1 onion
  • 1 (15 ounce) can kidney beans,
  • low sodium, with liquid
  • 1 (15 ounce) can hominy, low sodium, with liquid
  • 1 (14.5 ounce) can diced tomatoes, no salt, with liquid
  • 1 (10 ounce) can mild diced tomatoes with green chilies, no salt added, with liquid
  • 1 Tablespoon Taco seasoning mix, low sodium, or HappyHealthy Taco Seasoning
  • 1 Tablespoon packet dry ranch seasoning

DIRECTIONS


  1. Wash your hands well with soap and warm water for at least 20 seconds.
  2. Heat a large pot over medium heat and cook ground beef until no longer pink, 5-10 minutes. Cut onion into small pieces and add to pot with cooked meat. Cook until tender, 5 minutes. Drain mixture and return to the pot.
  3. Add beans, hominy, tomatoes, taco seasoning, and dry ranch seasoning. Stir and bring to a boil. Reduce heat and simmer 15-20 minutes, stirring occasionally.
  4. Refrigerate leftovers within 2 hours.
