Pumpkin French Toast

INGREDIENTS


  • 4 eggs, large
  • ¾ cup pumpkin puree
  • 1/2 cup milk, low fat
  • 2 teaspoons cinnamon
  • 1 teaspoon vanilla extract
  • Vegetable oil cooking spray or
  • Vegetable oil
  • 8 slices whole wheat bread
  • ½ cup honey or pancake syrup

DIRECTIONS

  1. Preheat oven to 350˚F. 
  2. Wash your hands well with soap and warm water for at least 20 seconds.
  3. In a medium bowl, whisk egg, pumpkin, milk, cinnamon, and vanilla extract.  
  4. Spray a baking pan with vegetable oil cooking spray.
  5. Dip bread in mixture to coat both sides evenly. Place slices of bread on the baking pan. Place the baking pan in the oven for 20 minutes. After 10 minutes, flip the bread and continue cooking for 10 minutes. Broil 1 – 2 minutes to crisp toast. 
  6. Top each serving with 2 Tablespoons honey or pancake syrup 
  7. Refrigerate any leftovers within 2 hours.
