Baked Meatballs

Makes 9 servings; 2-3 meatballs each serving

INGREDIENTS


  • 2 pounds ground beef
  • 2 Tablespoons Parmesan cheese
  • 1/2 cup cracker crumbs (finely crumbled)
  • 2 large eggs
  • 1 teaspoon dried parsley
  • 1 teaspoon garlic powder
  • 1 teaspoon pepper
  • Vegetable oil cooking spray or vegetable oil

 

DIRECTIONS


  1. Preheat oven to 350°F.
  2. Wash your hands well with soap and warm water for at least 20 seconds.
  3. In a mixing bowl, combine the meat, cheese, cracker crumbs, eggs, parsley, garlic powder, and pepper.
  4. Lightly spray a baking pan with vegetable oil cooking spray.
  5. Form the mixture into 1 1/2 inch balls and place on the baking pan.
  6. Bake uncovered for 25-30 minutes until the meatballs reach 165° and the outsides are browned.
  7. Refrigerate any leftovers within 2 hours.
