Pizza Sliders

INGREDIENTS


  • 1 pound ground beef 
  • 1 Tablespoon vegetable oil 
  • 1 (12 ounce) bag frozen bell pepper and onion blend 
  • 2/3 cup frozen spinach 
  • 1 teaspoon Italian seasoning 
  • ¼ teaspoon pepper 
  • 1 ¼ cup pizza sauce, low sodium if available 
  • 1 cup shredded mozzarella cheese, divided 
  • Vegetable oil cooking spray or vegetable oil 
  • 12 whole wheat slider buns 
  • 1 ounce (1/2 cup) sliced turkey pepperoni

DIRECTIONS


  1. Preheat oven to 375°F. 
  2. Wash your hands well with soap and warm water for at least 20 seconds. 
  3. Heat a large skillet over medium heat and cook ground beef until no longer pink, about 5-10 minutes, stirring to break apart into crumbles. Drain beef and set aside. 
  4. Add vegetable oil to pan. 
  5. Add bell peppers and onions to skillet, sauté over medium heat until tender and starting to brown, 5-10 minutes. 
  6. Add spinach, Italian seasoning, and pepper to skillet. Cook on medium until water is evaporated from spinach, about 5-10 minutes. 
  7. Add ground beef, pizza sauce, and ½ cup mozzarella cheese to skillet and stir until cheese begins to melt. Remove pan from heat. 
  8. Spray a 9 x 13 baking dish with vegetable oil cooking spray. 
  9. Place bottom half of slider buns in 9 x 13 baking dish. Top with combined meat and vegetable mixture and one turkey pepperoni each. 
  10. Top pepperoni with ½ cup mozzarella cheese then slider bun tops. Cover with aluminum foil and bake 15-20 minutes until cheese is melted. Allow to cool. 
  11. Refrigerate leftovers within 2 hours.
